Food fortification and enrichment are proactive strategies to improve nutrient intake across the population by adding essential vitamins and minerals to commonly consumed foods. This chapter briefly outlines the field by introducing the rationale for fortification and enrichment, highlighting their public-health importance in preventing micronutrient deficiencies, and noting that programs operate within legal and regulatory frameworks that set safety and labeling standards. It clarifies that enrichment restores nutrients lost during processing while fortification deliberately adds nutrients that may be lacking in the diet. Commonly used nutrients include iron, iodine, vitamin A, vitamin D, folic acid, and calcium, delivered through approaches ranging from industrial premixes and microencapsulation to novel delivery vehicles and bio-fortification. Achieving practical success relies on the consistency and availability of nutrients added during processing, storage, and digestion. The health impacts—reduced deficiency rates and improved developmental and metabolic outcomes—are balanced against challenges such as ensuring equitable reach, avoiding over-consumption, technological limitations, consumer acceptance, and ethical debates. Looking ahead, emerging trends emphasize targeted, evidence-based fortification, precision delivery systems, and stronger monitoring to maximize benefits while minimizing risks.
