This dataset contains the raw experimental data associated with the study on growth, sporulation kinetics, and heat resistance of Geobacillus stearothermophilus ATCC® 12980™ under static and dynamic temperature conditions. The dataset includes two Excel files. The first file, “Growth and sporulation kinetics.xlsx”, contains the raw kinetic data for total viable counts and heat-resistant spore counts obtained under static temperature conditions at 55 °C and 45 °C, and under dynamic temperature profiles involving cooling from 55 °C to 30 °C or 45 °C. The second file, “Heat resistance data.xlsx”, contains the heat-inactivation data for spores produced under each sporulation condition and treated at different temperatures. For the growth and sporulation kinetics, data include sampling time, microbial concentration, biological replicate, sporulation condition, and temperature profile. For the heat-resistance assays, data include treatment temperature, treatment time, biological replicate, mean microbial concentration, and standard deviation between technical replicates. These data were used to fit growth-sporulation models, thermal inactivation models, and Bigelow models, and to estimate kinetic and heat-resistance parameters including RMSE, R², δ-values, δ*, and z-values.
