ABSTRACT The aim of the study was to provide solutions to the olive‐growing sector through a technologically advanced and sustainable production model. Innovative techniques were developed for the recovery and management of traditional olive groves, with particular focus on canopy management and suitability for mechanization, in order to fully exploit their productive potential, reduce costs, and enhance local varieties. Monitoring of the extra virgin olive oil (EVOO) chemical parameters, carried out with FT‐NIR and other instrumental methods at regular intervals, contributed to real‐time identification of the drupe's development stage to achieve maximum yield without compromising the EVOO quality. Additionally, isotopic markers—strongly influenced by a complex combination of environmental, physiological, and biochemical factors—allowed for the creation of a typical fingerprint of Monti Iblei PDO EVOO. Finally, within the framework of the project, an overview of the phytosanitary status was obtained, particularly regarding the trend of olive fruit fly infestations through repeated monitoring. The results obtained will enable the development of a distinctive fingerprint for Sicilian PDO EVOO, ensuring a healthy and high‐quality final product and offering added value to companies by enhancing the differentiation of their goods within the global market.
