Exploring the Health Benefits of Pediococcus pentosaceus as a Lactic Acid Bacterium

Abstract Pediococcus pentosaceus is an emerging probiotic candidate within the lactic acid bacteria (LAB). This homofermentative, Gram-positive bacterium of the genus Pediococcus (class Bacilli, phylum Firmicutes) plays a significant role in food biotechnology. It enhances the organoleptic properties, nutritional value, and shelf life of food products, particularly fermented foods, through acidification and the production of antimicrobial compounds such as bacteriocins (e.g., pediocin). Beyond biopreservation, P. pentosaceus exhibits beneficial biological activities, including antioxidant, anti-inflammatory, and immunomodulatory properties. As a putative probiotic, it can modulate the gut microbiota, influence metabolic pathways, and contribute to host health. This review summarizes the current knowledge on the multifaceted health benefits of Pediococcus pentosaceus, exploring its antimicrobial mechanisms, probiotic potential, and therapeutic applications.
