This chapter introduces the microbiology of ingredients other than flour. The microbial ecology of foods is complex and depends on the interaction of multiple intrinsic, extrinsic, implicit, and process factors that will determine the microbiological quality of a food commodity. When ingredients are mixed during production and processing, the microbial populations may interact to spoil the product or potentially cause illness in the consumer. Therefore, awareness of the biological contaminants being added to baked and other flour-based products is important to ensure food safety. A brief discussion of the microbiology of animal- and non-animal based commodities used as ingredients in grain-based products is included in this chapter, along with control measures to ensure final product safety.
