Vitamin D Fortification: Needs and Approaches

Vitamin D fortification, the deliberate practice of increasing vitamin D is primarily aimed at improving the vitamin D content of food stuffs and uplifting the health status of consumers in addition to restoring or compensating for the loss of vitamin D. Numerous factors including limited dietary sources of vitamin D, inadequate availability of sunlight along with socio-economic, cultural, and religious constraints might limit the fulfilment of recommended dietary allowance of vitamin D for humans. Thus, food fortification is a timely need to combat malnutrition and reduce the risks of non-communicable diseases. To address this, vitamin D fortification can be used as an intervention to fight against vitamin D insufficiency and/or deficiency as a cost-effective and evidence-based approach to cater for a broader global market. On some occasions, fortification can be mandatory or on other occasions it can be voluntary (market-driven approaches in developed countries) based on local food regulatory limits for fortification. Key steps essential to a thriving food fortification program are proposed in this chapter. Further, this chapter critically examines the current food fortification practice of vitamin D enrichment concerning its need and approach in the global context. Policy guidelines and international programs related to vitamin D fortification strategies will also be accounted for to deepen our understanding of the needs and various approaches to vitamin D fortification.
