Study of Polyphenols, Organic Acids and Antioxidant Activity of Red Oak Fruits (Quercus rubra L.)

The paper presents the results of a study of the qualitative composition and quantitative content of polyphenolic compounds, organic acids and antioxidant activity of raw materials of red oak fruits (Quercus rubra L.) from natural habitats in Ukraine. Identification and determination of the concentrations of flavonoids (especially catechins), hydroxycinnamic acids and simple phenolic compounds were carried out by high-performance liquid chromatography, and dicarboxylic, mono- and tricarboxylic acids by gas chromatography-mass spectrometry. In the fruits of Q. rubra, 30 biologically active compounds were found, among which gallic acid (790.49 mg/100 g), epicatechin gallate (163.34 mg/100 g), kaempferol-3-β-glycoside (148.09 mg/100 g), naringin (124.23 mg/100 g), rutin (116.15 mg/100 g) and trans-ferulic acid (45.63 mg/100 g) dominate. The high content of levulinic (288.94 mg/100 g) and citric (287.32 mg/100 g) acids emphasizes the value of the raw material as a source of organic acids. The antioxidant activity of the aqueous-alcoholic extract was studied, which reached 85.47% at the tenth minute of exposure, which correlates with the high concentration of phenolic compounds in the studied extract. Comparison with leaves and annual shoots of Q. rubra showed a significantly higher total phenol content in the fruits. The results obtained confirm that the fruits of red oak can be a promising pharmaceutical and cosmetic raw material due to their pronounced antioxidant, and due to the high content of polyphenolic compounds potentially anti-inflammatory, antimicrobial, neuroprotective and antitumor activity. The fruits of red oak can be used to create phytopreparations with antioxidant action, and the extracts are promising as functional ingredients in cosmetology.
