The dataset comprises experimental data generated during the master’s dissertation of Adriano Rondineli Silva da Costa, focusing on the use of pulsed electric field and high-intensity ultrasound as microstructural pretreatments to improve the freezing-thawing kinetics and bioactive compound preservation of jabuticaba (Myrciaria jaboticaba) fruits.
