Background Baby corn, the unfertilized immature ear of Zea mays L., is consumed as a whole-cob vegetable and processed into pickles, powders, and side-stream ingredients. However, its composition and functionality are interpreted using mature-maize data, despite its distinct developmental anatomy and hydrated matrix. Scope and approach We aimed at critically evaluating baby corn as an immature maize-ear food matrix by integrating baby-corn evidence with mechanistically relevant findings from maize silk, husk, cob, sweet corn, mature grain, and comparable immature vegetables. Attention was given to composition, tissue- and stage-specific bioactives, processing retention, product design, side-stream valorization, bioaccessibility, and the strength of evidence supporting functional-food and health-related claims. Key findings and conclusions Baby corn should be regarded as an immature maize-ear matrix whose nutritional and functional characteristics depend on tissue type, harvest stage, and processing history. The edible de-husked cob provides a crisp, low-energy, fiber-containing matrix with modest native phenolic and carotenoid contents, whereas silk and husk are chemically richer fractions, particularly in flavonoids and xanthophylls, and may be developed as distinct ingredient streams. Optimized blanching, pickling, drying, milling, fermentation, and packaging can preserve phytochemicals, extend shelf life, and support applications in fortified, powdered, fermented, and composite foods. Nevertheless, current evidence is dominated by compositional analyses, antioxidant assays, and in vitro enzyme-inhibition studies. Direct information on digestive release, micellization, colonic metabolism, realistic dietary exposure, safety, and human efficacy remain limited. Therefore, stronger functional and health claims require standardized digestion studies, metabolite profiling, dose-relevant formulations, and human trials.
