In recent times, the energy crisis is affecting the whole world and demands finding alternative sources. Geothermal energy is a clean, sustainable, and renewable energy source that has gained attention in recent years due to its potential to reduce greenhouse gas (GHG) emissions and dependence on fossil fuels. It is being used as a promising alternative to fossil fuels in various applications, including drying fresh produce. Drying is an essential process in the food system, and it is a significant part of the energy 382 used in food production. This chapter presents an overview of the potential use of geothermal energy in drying fresh produce. Drying is a crucial step in preserving fresh produce and extending its shelf life. Traditionally, drying has been done using fossil fuels such as coal, gas, and electricity. However, the use of these fuels contributes significantly to environmental degradation, such as air pollution, and climate change. On the other hand, geothermal energy is a clean and renewable source of energy that can be used to dry fresh produce. In developed countries, geothermal energy is used to dry food products and has several benefits, including reduced energy costs, a reduced carbon footprint, and increased food quality and safety. It can be harnessed through several methods, including direct use and power generation. Geothermal energy is generated from the natural heat of the earth and is a sustainable energy source with a low carbon footprint. Additionally, geothermal energy can be used in remote areas, where access to traditional drying methods may be limited. In conclusion, the use of geothermal energy to dry food produce is a promising solution that can contribute to sustainable food production and reduce the environmental impact of the food industry. It is the need of the time to explore the potential of geothermal energy for drying different types of food production systems, optimizing the process, and developing cost-effective and efficient geothermal drying systems.
