Global food waste occurred at various stages of the supply chain. These losses are generated in the course of postharvest handling, production and storage of food products. Agricultural by-products may be less attractive but are potential source of value-added phenolic compound with vast range of bioactivity. Phenolic compounds play a prominent role because of their well known beneficial effects on human health. Agricultural waste and by-products, especially those from fruits and vegetables, serve as rich sources of phenolic compounds. Phenolic compounds are naturally occurring in many plants, including plant waste, and exhibit a wide range of therapeutic properties such as antioxidant, anti inflammatory, and anti-cancer activities. The extraction of these valuable compounds from agricultural waste can be achieved through various methods, including solvent extraction, steam distillation, and supercritical fluid extraction. These extracted phenolics have significant applications across various sectors such as the food and beverage industry, pharmaceuticals, and personal care products. Utilizing agricultural waste as a source of phenolic compounds offers a sustainable, cost-effective approach and contributes to reducing environmental waste and pollution. In conclusion, beyond their health promoting benefits, phenolic compounds stand out as highly valued secondary metabolites with potent antibacterial properties and natural preservative capabilities. Further research is essential to determine optimal dosages for safe application in health-promoting foods and to prevent any potential adverse effects.
