Bioactive Peptides From Fermented Pulses

Bioactive peptides are short fragments of 2–20 amino acids, produced using enzymatic hydrolysis or microbial fermentation. Pulse seeds are important source for carbohydrates dietary protein, fiber, and an important source of essential vitamins and minerals. Pulses are rich source for protein. Proteins present in pulses are mostly in bound form, not accessible for uptake. Moreover, there are some anti-nutrient factors associated with raw pulses, which lead to have negative impact on human heath, if consumed without processing. Enzymatic hydrolysis or microbial fermentation increases accessibility of beneficial proteins, having health-promoting effects. Bioactive peptides have various properties such as anti-oxidant, anti-diabetic, and anti-cancerous and so help in prevention of various non-communicable diseases. Composition of amino acids, length, and peptide sequence mainly determine the bioactivity of pulses. Mainly short chain peptides were found to possess more activity. Due to their health benefits and disease prevention ability bioactive peptides can act as fermentative nutraceuticals.
