Before we trace the two learners’ changes over time, let us begin by understanding the world of their work. This chapter describes the guest-escorting walk in the context of the hospitality industry and provides an example of a full-length walk by the novice. In the second half of the chapter, we explain the study’s methodology, including the setting, participants, data collection, and analytical principles and procedures.
