Amaranth is a globally ubiquitous and cosmopolitan pseudocereal appraised for its phytochemistry and health benefits when consumed. Virtually every vegetative part of the amaranth plant has been studied and found to possess several nutraceuticals that are employable for dietetic and therapeutic roles. It is generally acceptable for these purposes based on its plant food profile, gluten-free attribute, and prominence for fiber and protein of relatively high biological value. In this chapter, the nutritional and phytochemical constituencies of amaranth are discoursed. Its serviceability and employment for the management of metabolic syndrome diseases are comprehensively described. Furthermore, biochemical mechanisms for the therapeutic effects against cancer, diabetes, and hypertension are outlined. In addition, the techno-functional uses of different parts of amaranth and their derivatives as exploited in novel food formulations are explored. Amaranth has been studied to be a potential food of multiple functionalities beyond dietary needs.
